Smoked sausage and potato bake

Posted on January 23, 2026 by Admin

Comfort food classic — smoky, hearty, zero fuss. 🔥
Here’s a Smoked Sausage & Potato Bake that works for weeknights and potlucks.

Smoked Sausage & Potato Bake

Ingredients

  • 1½–2 lbs potatoes, thinly sliced (Yukon gold or red)
  • 14 oz smoked sausage (kielbasa or andouille), sliced
  • 1 medium onion, sliced
  • 1 cup shredded cheddar (optional but great)
  • ¾ cup heavy cream or milk
  • 2 tbsp melted butter or olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp dried thyme or Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • Optional add-ins: bell peppers, broccoli, green beans

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss potatoes with cream, butter, garlic, paprika, thyme, salt, and pepper.
  3. Grease a baking dish and layer:
    • half the potatoes
    • sausage + onion
    • remaining potatoes
  4. Cover tightly with foil.
  5. Bake 45 minutes.
  6. Uncover, sprinkle with cheese if using.
  7. Bake 15–20 minutes more until potatoes are tender and top is golden.

One-Pan Skillet Version

  1. Parboil potatoes 5–7 minutes.
  2. Brown sausage in a large skillet.
  3. Add potatoes, onion, seasoning, and a splash of cream.
  4. Cover and cook 15 minutes, uncover to crisp.

Flavor Twists

  • Cajun: use andouille + Cajun seasoning
  • German-style: kielbasa + mustard drizzle + caraway
  • Cheesy ranch: add ranch seasoning + extra cheddar
  • Spicy: red pepper flakes or hot honey drizzle

Serve With

  • Simple green salad
  • Roasted cabbage
  • Applesauce (trust me 😄)

If you want a slow cooker version, foil packet camping style, or lighter version, I’ve got you.
