Slow Cooker Potato Chunks with Butter & Onions

Ingredients

  • 2 lbs potatoes, cut into 1–2 inch chunks (Yukon gold or red potatoes work best)
  • 1 large onion, thinly sliced
  • 3–4 tbsp butter, cut into small pieces
  • ½ cup chicken or vegetable broth (optional, keeps potatoes extra moist)

Instructions

  1. Prep the Ingredients
    • Wash and cut potatoes into chunks.
    • Thinly slice the onion.
  2. Layer in Slow Cooker
    • Place potato chunks in the bottom of the slow cooker.
    • Spread sliced onions on top.
    • Dot butter evenly over potatoes and onions.
    • Pour broth over everything if using.
    • Season with salt, pepper, and optional herbs.
  3. Cook
    • Cover and cook on LOW 5–6 hours or HIGH 2–3 hours.
    • Check potatoes — they should be tender and flavorful.
  4. Finish & Serve
    • Gently toss the potatoes and onions to coat with butter and juices.

Tips

  • Extra flavor: Add a clove or two of garlic, smashed, on top.
  • Crispy edges: For roasted-style edges, transfer cooked potatoes to a baking sheet and broil 5 minutes.
