Ingredients

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water

  1. Season and sear the roast:
    • Generously season the beef with salt and pepper.

    • Place the carrots, celery, onion, and potatoes at the bottom of the slow cooker.

    • Pour over the roast and vegetables. Add bay leaves.
  4. Cook low and slow:
    • Cover and cook on low for 8–10 hours or on high for 4–6 hours, until the beef is fork-tender.
  5. Make the gravy (optional):
    • Remove the roast and vegetables from the slow cooker and keep warm.
    • Pour the cooking liquid into a saucepan, bring to a simmer, and stir in the cornstarch slurry. Cook until thickened, 3–5 minutes.
  6. Serve:
    • Slice or shred the roast and serve with vegetables and gravy.
