π Slow-Cooker Pork Roast
Ingredients (serves 4β6)
- 3β4 lb pork shoulder or pork loin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tbsp olive oil (optional, for searing)
- 1 cup chicken broth
- 1 onion, sliced
- 3β4 carrots, cut into chunks
- 3β4 potatoes, cut into chunks
Instructions
- Season pork
- Pat pork dry.
- Rub with salt, pepper, garlic powder, onion powder, and paprika.
- Optional sear
- Heat oil in a skillet.
- Sear pork on all sides until browned (adds flavor but can be skipped).
- Assemble slow cooker
- Place onion, carrots, and potatoes in the bottom.
- Set pork roast on top.
- Pour broth around (not over) the pork.
- Cook
- Cover and cook
- LOW: 7β8 hours
- HIGH: 4β5 hours
- Pork should be fork-tender.
- Cover and cook
- Serve
- Slice or shred pork.
- Spoon cooking juices over the top.
Tips
- Pork shoulder = best for shredding
- Pork loin = leaner, sliceable (donβt overcook)
- Add apples or a splash of apple cider vinegar for sweetness.
- Thicken juices with cornstarch for an easy gravy.
