Slow Cooker Pork Chops on a Stuffing Bed

Ingredients

  • 4 bone-in or boneless pork chops (¾–1 inch thick)
  • 1 box (6 oz) stuffing mix (chicken or pork flavored)
  • 1½ cups chicken broth (or water)
  • 1 can cream of mushroom or cream of chicken soup
  • 1 small onion, sliced (optional)
  • 1–2 tbsp olive oil or butter (optional, for browning)
  • Salt & pepper
  • Optional extras: sliced mushrooms, celery, carrots, garlic, poultry seasoning

Instructions

  1. Optional but recommended:
    Season pork chops with salt & pepper and quickly brown them in a skillet (1–2 minutes per side). This adds flavor but can be skipped.
  2. Prepare stuffing bed:
    In the slow cooker, mix stuffing mix with chicken broth. Spread evenly on the bottom.
  3. Add extras (optional):
    Scatter onions, mushrooms, or veggies over the stuffing.
  4. Layer pork chops:
    Place pork chops on top of the stuffing.
  5. Add soup:
    Spoon cream soup evenly over the pork chops (don’t stir).
  6. Cook:
    • Low: 6–7 hours (best for tender chops)
    • High: 3–4 hours
      Pork should reach 145°F / 63°C.

Tips for Best Results

  • Use thicker chops to avoid drying out.
  • If stuffing seems too wet at the end, remove the lid and cook on High for 15–20 minutes.
  • For a crisp top, briefly broil the pork chops after cooking.

Variations

  • Apple pork: Add sliced apples + a pinch of cinnamon.
  • Herb butter: Dot pork chops with butter and thyme or rosemary.
  • Cheesy stuffing: Stir ½ cup shredded cheese into stuffing at the end.
