Ah, Slow Cooker Million Dollar Chicken! This is one of those “set it and forget it” recipes that turns simple chicken breasts into a rich, creamy, slightly sweet, and cheesy main dish—hence the “million dollar” name. Here’s a detailed recipe:


Ingredients (serves 4–6)

  • 4–6 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 packet (1 oz) ranch dressing mix (or homemade equivalent)
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • ½ cup cooked and crumbled bacon (optional but adds richness)
  • 1 small can (8 oz) crushed pineapple, drained
  • ½ cup butter, melted
  • ¼ teaspoon black pepper (optional)

Instructions

  1. Prepare the Slow Cooker:
    • Spray the slow cooker insert with nonstick cooking spray or lightly grease with butter.
  2. Layer the Chicken:
    • Place chicken breasts in a single layer at the bottom of the slow cooker.
  3. Mix Topping:
    • In a medium bowl, combine cream of chicken soup, ranch dressing mix, shredded cheese, bacon, pineapple, melted butter, and black pepper. Stir well.
  4. Add the Topping:
    • Spoon the mixture evenly over the chicken breasts.
  5. Cook:
    • Cover and cook on low for 4–5 hours or high for 2–3 hours, until the chicken is fully cooked (internal temp ~165°F / 74°C) and tender.
  6. Serve:
    • Spoon sauce over chicken when serving. Goes great with rice, mashed potatoes, or steamed veggies.

Tips & Variations:

  • For extra richness, add a little cream cheese to the topping mix.
  • You can swap pineapple for mandarin oranges for a slightly different flavor.
  • Leftovers make great sandwiches or wraps!
