  • 2 lb chicken thighs or breasts (boneless or bone-in)

  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp sesame oil (optional but great)
  • Β½ tsp black pepper
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Optional garnish: sesame seeds, sliced green onions

  1. Add chicken
    • Place chicken in the slow cooker in a single layer if possible.
  2. Make sauce
    • Whisk soy sauce, honey, ketchup, garlic, ginger, vinegar, sesame oil, and pepper.

    • Cover and cook on LOW 5–6 hours or HIGH 3–4 hours, until chicken is very tender.
  4. Thicken sauce (optional)
    • Remove chicken.
    • Whisk cornstarch slurry into sauce.

    • Return chicken to coat.

    • Spoon sauce over chicken.
