Slow Cooker Chicken Breasts

Ingredients (serves 4):

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 medium onion, sliced
  • 2–3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1–2 tbsp olive oil or butter (optional)
  • Optional add-ins: carrots, potatoes, mushrooms, or bell peppers

Instructions:

  1. Prep chicken: Season chicken breasts with salt, pepper, paprika, and thyme/Italian seasoning.
  2. Optional sear: Heat olive oil in a skillet and brown chicken 1–2 minutes per side. This adds flavor but isn’t required.
  3. Add to slow cooker: Place chicken in the slow cooker. Add sliced onion, garlic, and any optional vegetables. Pour chicken broth over everything.
  4. Cook:
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
      Chicken should reach an internal temperature of 165°F (74°C) and be tender.
  5. Serve: Remove chicken and let rest for a few minutes before slicing. Use the cooking liquid as a simple sauce or thicken it into gravy:
    • Mix 2 tbsp cornstarch or flour with ¼ cup cold water, stir into liquid, and cook on HIGH for 10–15 minutes until thickened.

  • Shredded chicken? Cook on LOW, then shred with two forks right in the crockpot—it will soak up the juices.
