Here’s a simple and tasty slow cooker chicken and potatoes recipe that’s hearty and fuss-free:


Slow Cooker Chicken and Potatoes

Ingredients (serves 4)

  • 4 bone-in, skinless chicken thighs (or breasts)
  • 1 lb (450 g) baby potatoes, halved
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)
  • Salt & pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Prep chicken: Pat dry and season with paprika, thyme, salt, and pepper.
  2. Layer veggies: Place onions, garlic, and potatoes in the bottom of the slow cooker. Drizzle with olive oil and season lightly.
  3. Add chicken: Place seasoned chicken on top of the potatoes.
  4. Pour broth: Pour chicken broth around (not over) the chicken to keep the seasoning on the meat.
  5. Cook:
    • Low for 6–7 hours or
    • High for 3–4 hours
      The chicken should reach an internal temperature of 165°F (74°C), and potatoes should be tender.
  6. Optional finish: For a crispier top, transfer chicken to a baking sheet and broil 3–5 minutes.
  7. Serve: Sprinkle with parsley and enjoy with the tender potatoes and flavorful broth.

💡 Tips:

  • Add carrots or green beans for extra veggies.
  • For a richer flavor, replace 1/2 cup of broth with white wine.
  • Using bone-in chicken keeps it juicy and flavorful in slow cooking.
