Here’s a versatile Slow Cooker Chicken recipe — tender, flavorful, and easy to customize! 🍗⏳


Slow Cooker Chicken

Servings: 4–6

Prep Time: 10 minutes

Cook Time: 4–6 hours


Ingredients:

  • 4–6 chicken thighs or breasts (boneless or bone-in)

  • 1 onion, sliced

  • 3 cloves garlic, minced

  • 1 cup chicken broth (or water)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried thyme or Italian seasoning

  • Optional: 1 cup carrots, sliced; 1 cup potatoes, chopped; 1 cup bell peppers, chopped


Instructions:

  1. Prepare the slow cooker:

    • Place sliced onions and garlic at the bottom of the slow cooker.

    • Add any vegetables if using.

  2. Season the chicken:

    • Rub chicken with salt, pepper, paprika, and thyme (or other seasonings).

    • Place the chicken on top of the vegetables.

  3. Add liquid:

    • Pour chicken broth over the chicken.

  4. Cook:

    • Cover and cook on low for 4–6 hours or high for 2–3 hours, until chicken reaches an internal temperature of 165°F (74°C) and is tender.

  5. Serve:

    • Serve the chicken with the cooked vegetables and spoon some of the flavorful juices over the top.


Tips & Variations:

  • 🍋 Lemon garlic chicken: Add juice of 1 lemon and fresh herbs like rosemary.

  • 🍯 Honey mustard: Mix ¼ cup honey and ¼ cup Dijon mustard; pour over chicken before cooking.

  • 🥫 Creamy version: Add ½ cup heavy cream or cream cheese during the last 30 minutes for a creamy sauce.

  • 🥄 Shredded chicken: Cook boneless chicken breasts and shred for tacos, sandwiches, or salads.
