Shrimp Stuffed Peppers

Here’s a delicious Shrimp Stuffed Peppers recipe—creamy, cheesy, savory, and easy enough for a weeknight but impressive enough for guests.


🦐🌶️ Shrimp Stuffed Peppers

Servings: 4
Prep time: 20 minutes
Cook time: 30–35 minutes


🧂 Ingredients

  • 4 large bell peppers (any color)
  • 1 lb shrimp, peeled & deveined, chopped into small pieces
  • 1 tbsp olive oil or butter
  • ½ onion, finely diced
  • 2–3 garlic cloves, minced
  • 1 cup cooked rice (white, jasmine, or cauliflower rice)
  • ½ cup diced tomatoes (fresh or canned, drained)
  • ½ cup shredded mozzarella or Monterey Jack
  • ¼ cup Parmesan cheese
  • 2 tbsp cream cheese OR heavy cream (optional but makes it creamy)
  • 1 tsp Cajun seasoning (or paprika + garlic powder + onion powder)
  • Salt & pepper to taste
  • 1–2 tbsp fresh parsley or green onions, chopped
  • Optional: squeeze of lemon

🔪 Instructions

1. Prep the Peppers

  1. Slice the tops off peppers and remove seeds.
  2. Preheat oven to 375°F (190°C).
  3. Place peppers cut-side up in a baking dish.
  4. Add a splash of water to the dish and cover with foil.
  5. Pre-bake for 15 minutes to soften.

2. Cook the Filling

  1. Heat olive oil in a pan over medium heat.
  2. Sauté onions for 3–4 minutes until softened.
  3. Add garlic and cook 1 minute.
  4. Add chopped shrimp and cook until just pink (2–3 minutes).
  5. Stir in tomatoes, cooked rice, seasonings, and cream cheese/heavy cream if using.
  6. Taste and adjust salt and pepper.
  7. Stir in half the mozzarella and the Parmesan.
  8. Remove from heat and mix in parsley/green onion.

3. Stuff the Peppers

  • Spoon the shrimp mixture into the pre-baked peppers.
  • Top with remaining mozzarella cheese.

4. Bake

  • Return peppers to the oven and bake 15–20 minutes
    or until cheese is melted and lightly golden.

🌟 Optional Enhancements

  • Add andouille sausage for Cajun flavor.
  • Add 1 tsp Old Bay for a coastal twist.
  • Stir in ¼ cup Alfredo sauce for extra creaminess.
  • Use pepper jack cheese for more spice.
