Instructions

1. Prepare the shrimp:

  • Toss shrimp with olive oil, paprika, salt, and pepper.
  • Sauté in a skillet over medium heat for 2–3 minutes per side, until just pink. Remove and set aside.

2. Make the fondue base:

  • Rub the inside of a fondue pot (or small saucepan) with the cut side of the garlic halves, then discard the garlic.
  • Pour in the wine and heat gently until steaming (do not boil).
  • In a bowl, toss grated cheeses with cornstarch (prevents clumping).
  • Gradually whisk cheese into the hot wine, a handful at a time, until smooth and creamy.

3. Season the fondue:

  • Stir in Dijon mustard, nutmeg, and black pepper. Keep warm over low heat.

4. Serve:

  • Arrange shrimp around the fondue pot, or place some directly into the cheese.
  • Dip bread cubes, vegetables, and cooked shrimp into the warm cheese using fondue forks.

💡 Tips:

  • Keep the heat low—high heat will cause the cheese to seize and become stringy or grainy.
  • For a spicier twist, add a pinch of cayenne or smoked paprika.
  • You can swap half the wine for beer for a different depth of flavor.
  • For a garlic-butter alternative, melt butter with garlic, lemon juice, and herbs, then serve cooked shrimp for dipping instead of cheese.
