Ingredients

For the Filling

  • 12–14 cooked lasagna noodles (or cannelloni shells)
  • 1 lb (450 g) shrimp, peeled, deveined, and chopped
  • 2 cups fresh spinach (or 1 cup cooked, squeezed dry)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • 1 egg
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • Optional: pinch of crushed red pepper flakes

For the Cream Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups heavy cream (or half-and-half)
  • ½ cup chicken broth
  • ½ cup Parmesan
  • Salt & pepper to taste
  • Optional: pinch of nutmeg or garlic powder

Instructions

1. Prepare Pasta

  • Cook lasagna noodles until al dente.
  • Drain and lay flat on parchment so they don’t stick.

2. Make the Filling

  1. In a skillet, cook chopped shrimp with garlic until just pink (2–3 minutes).
  2. Add spinach and cook until wilted (if using fresh).
  3. Remove from heat and cool slightly.
  4. In a bowl, combine ricotta, mozzarella, Parmesan, egg, salt, pepper, and Italian seasoning.
  5. Stir in shrimp and spinach mixture.

3. Make the Cream Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour; cook 1 minute.
  3. Slowly add cream and chicken broth.
  4. Simmer until slightly thickened.
  5. Stir in Parmesan, salt, and pepper.
  6. Turn off heat.

4. Assemble the Pasta Rolls

  1. Spread a thin layer of sauce on the bottom of a baking dish.
  2. Spoon about 2–3 tbsp of filling onto each lasagna noodle.
  3. Roll tightly and place seam-side down in the dish.
  4. Pour remaining cream sauce over the top.
  5. Sprinkle extra mozzarella or Parmesan if desired.

5. Bake

  • Bake at 375°F (190°C) for 20–25 minutes, until bubbly and lightly golden.

6. Serve

  • Garnish with fresh parsley, basil, or a squeeze of lemon.
  • Serve with garlic bread or a simple salad.

⭐ Variations

  • Cajun Style: Add 1–2 tsp Cajun seasoning to the shrimp before cooking.
  • Extra Cheesy: Add cream cheese (2 oz) to the filling.
  • Use Manicotti or Jumbo Shells: Stuff instead of rolling — easier and just as good.
  • Lighter Version: Use half-and-half and increase spinach.
