Here’s a quick, fresh Shrimp and Asparagus Stir-Fry—crisp-tender veggies, juicy shrimp, and a savory sauce that comes together in 20 minutes 🍤🥦


Shrimp & Asparagus Stir-Fry

Ingredients (2–3 servings)

  • 1 lb large shrimp, peeled & deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp oil (olive, avocado, or sesame)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional but great)

Stir-Fry Sauce

  • 3 tbsp soy sauce (or tamari)
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp cornstarch
  • ¼ cup water or broth

Instructions

  1. Make the sauce
    Whisk all sauce ingredients in a small bowl. Set aside.
  2. Cook asparagus
    Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
    Add asparagus and stir-fry for 3–4 minutes until bright green and crisp-tender. Remove and set aside.
  3. Cook shrimp
    Add remaining oil. Add shrimp in a single layer.
    Cook 1–2 minutes per side until pink and just cooked. Remove with asparagus.
  4. Aromatics
    Add garlic and ginger to the pan; sauté 30 seconds until fragrant.
  5. Combine & glaze
    Return shrimp and asparagus to the pan.
    Pour in sauce and stir for 1–2 minutes until thick and glossy.
  6. Serve hot

Serving Ideas

  • Over steamed rice or jasmine rice
  • With noodles (rice noodles or lo mein)
  • Low-carb: serve as-is or over cauliflower rice
