Here’s a hearty and flavorful Seafood Stew — a comforting mix of seafood, vegetables, and aromatic broth. 🦐🐟🦑


🥘 Seafood Stew

Serves: 4–6
Prep Time: 15 min
Cook Time: 25–30 min


Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 tsp paprika
  • ½ tsp crushed red pepper flakes (optional, for heat)
  • 1 can (14 oz / 400 g) diced tomatoes
  • 4 cups (960 ml) seafood or chicken broth
  • 1 bay leaf
  • ½ tsp dried thyme or Italian seasoning
  • Salt & black pepper, to taste
  • ½ lb (225 g) shrimp, peeled and deveined
  • ½ lb (225 g) firm white fish (cod, tilapia), cut into chunks
  • ½ lb (225 g) mussels or clams, cleaned (optional)
  • ¼ cup fresh parsley or cilantro, chopped
  • Lemon wedges, for serving

Instructions

1. Sauté Vegetables

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion, garlic, celery, carrot, and bell pepper. Sauté until softened, about 5–6 minutes.

2. Add Spices & Tomatoes

  1. Stir in paprika, red pepper flakes, salt, and black pepper.
  2. Add diced tomatoes and cook 2–3 minutes to combine flavors.

3. Add Broth & Simmer

  1. Pour in seafood or chicken broth.
  2. Add bay leaf and thyme.
  3. Bring to a gentle boil, then reduce heat and simmer 10 minutes to develop flavor.

4. Add Seafood

  1. Add fish chunks and mussels/clams first; simmer 5–7 minutes.
  2. Add shrimp last and cook 3–5 minutes, until shrimp are pink and opaque and mussels have opened.
  3. Discard any unopened shellfish.

5. Finish & Serve

  • Remove bay leaf.
  • Stir in fresh parsley or cilantro.
  • Serve hot with crusty bread or over rice.
  • Optional: squeeze fresh lemon juice over the top before serving.

Tips & Variations

  • Creamy Version: Stir in ½ cup heavy cream or coconut milk for a richer stew.
  • Spicy Kick: Add 1 diced jalapeño or more red pepper flakes.
  • Mixed Seafood: Use a combination of crab, scallops, squid, or lobster.
  • Wine Boost: Add ½ cup dry white wine with the broth for extra depth.
