Here’s a recipe for a Savory Meatloaf with Caramelized Onion Gravy — rich, comforting, and perfect for a hearty meal.


🍖 Meatloaf Ingredients (serves 4–6)

  • 1 ½ lb (≈ 680 g) ground beef (or mix beef + pork for extra flavor)
  • 1 cup (100 g) breadcrumbs
  • ½ cup (120 ml) milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp ketchup or tomato paste (for topping)
  • 1 tsp Dijon mustard (optional, for topping)

🧅 Caramelized Onion Gravy Ingredients

  • 2 large onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 1 tsp sugar (optional, to speed caramelization)
  • 2 tbsp all-purpose flour
  • 2 cups (480 ml) beef broth
  • 1 tsp Worcestershire sauce
  • Salt & black pepper, to taste

1. Prepare the meatloaf

  1. Preheat oven to 180 °C (350 °F).
  2. In a small bowl, soak breadcrumbs in milk for 5 minutes.
  3. In a large bowl, combine ground meat, soaked breadcrumbs, chopped onion, garlic, egg, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
  4. Shape mixture into a loaf and place in a greased baking dish or loaf pan.
  5. Mix ketchup and Dijon (if using) and spread evenly over the top.
  6. Bake 50–60 minutes, until internal temperature reaches 70 °C (160 °F). Remove from oven and let rest 10 minutes.

2. Make the caramelized onion gravy

  1. While meatloaf bakes, melt butter in a skillet over medium heat.
  2. Add sliced onions and sugar. Cook slowly, stirring occasionally, for 15–20 minutes, until deep golden brown and caramelized.
  3. Sprinkle flour over onions and stir for 1–2 minutes to cook the raw flour taste.
  4. Gradually add beef broth, stirring constantly, until smooth and slightly thickened.
  5. Add Worcestershire sauce, salt, and pepper to taste. Simmer 5 minutes on low heat.

3. Serve

  • Slice the meatloaf and pour caramelized onion gravy over each slice.
  • Serve with mashed potatoes, roasted vegetables, or a simple green salad.

🍴 Tips & Variations

  • Mix meats: A 50/50 blend of beef and pork gives more flavor and moisture.
  • Cheese twist: Add shredded cheddar or mozzarella inside the meatloaf before baking.
  • Make ahead: Meatloaf can be prepared a day in advance and baked just before serving.
  • Gravy variations: For extra richness, finish gravy with 1–2 tbsp heavy cream or a splash of red wine.
