Here’s an easy, cozy Rotisserie Chicken and Stuffing Casserole 🍗🥘—perfect for a quick family dinner with minimal prep:


Ingredients (serves 4–6)

  • 1 rotisserie chicken, meat removed and shredded
  • 1 box (6 oz / 170 g) stuffing mix (chicken or herb)
  • 1½ cups chicken broth
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • ½ cup sour cream (or plain Greek yogurt)
  • ½ cup melted butter
  • Optional add-ins:
    • 1 cup frozen mixed vegetables or peas
    • ½ tsp poultry seasoning or dried thyme
    • Salt & pepper, to taste

Instructions

1. Preheat oven

  • Preheat oven to 180°C / 350°F.
  • Lightly grease a 9×13-inch baking dish.

2. Make the filling

  1. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, and optional vegetables.
  2. Spread evenly in the baking dish.

3. Prepare the stuffing

  1. In a separate bowl, combine stuffing mix, melted butter, and chicken broth.
  2. Stir until just moistened (don’t overmix).

4. Assemble

  • Spoon the stuffing evenly over the chicken mixture.

5. Bake

  • Cover loosely with foil and bake 25 minutes.
  • Remove foil and bake another 10–15 minutes until the top is golden and casserole is bubbly.

6. Serve

  • Let rest 5 minutes before serving.
  • Serve with cranberry sauce or a green salad for a complete meal.

💡 Tips

  • For extra creaminess, add a splash of milk to the chicken mixture.
  • Swap cream of chicken for cream of mushroom for a deeper flavor.
  • Leftovers reheat beautifully and taste even better the next day.
