Ingredients (serves 4)

  • 4–6 sausages (pork, beef, chicken, or your choice)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme or rosemary
  • 1 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper, to taste
  • 1–2 tbsp balsamic vinegar (optional, for a slight tang)

Instructions

  1. Preheat the oven:
    Preheat to 400°F (200°C).
  2. Prepare the vegetables:
    In a roasting pan, toss the sliced onions, bell peppers, and garlic with olive oil, thyme/rosemary, paprika, salt, and pepper. Spread evenly.
  3. Add the sausages:
    Place the sausages on top of the vegetables. You can prick them lightly with a fork to prevent bursting, but this is optional.
  4. Roast:
    Roast in the preheated oven for 25–35 minutes, turning the sausages halfway through so they brown evenly. The vegetables should be tender and slightly caramelized.
  5. Optional glaze:
    In the last 5 minutes, drizzle balsamic vinegar over the vegetables for extra flavor.
  6. Serve:
    Serve hot with crusty bread, mashed potatoes, or a fresh salad.
