🍖 Garlic-Herb Oven Roast Beef

Ingredients

  • 1–1.5 kg beef roast (ribeye, sirloin, or top round)
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon thyme, chopped
  • Optional: 1 teaspoon paprika for color

Instructions

1️⃣ Prep the Roast

  1. Take the beef out of the fridge 30 minutes before cooking.
  2. Mix olive oil, garlic, rosemary, thyme, salt, pepper, and paprika into a paste.
  3. Rub evenly over the entire roast.

2️⃣ Sear for Flavor

  1. Preheat a skillet over medium-high heat.
  2. Sear the roast on all sides for 2–3 minutes until golden brown.

3️⃣ Roast in Oven

  1. Preheat oven to 180 °C (350 °F).
  2. Place beef on a roasting rack in a pan.
  3. Roast according to desired doneness (use the same timing and thermometer as classic roast beef).

4️⃣ Rest and Slice

  1. Tent with foil and rest 10–15 minutes.
  2. Slice against the grain for maximum tenderness.

Serving Suggestions

  • Serve with roasted or steamed vegetables and mashed potatoes.
  • Use drippings to make a simple pan gravy.
  • Great for sandwiches or leftover beef hash.
