🍖 Classic Roast Beef

Ingredients

  • 1–1.5 kg beef roast (like ribeye, sirloin, or top round)
  • 2 tablespoons olive oil
  • 3–4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 1 teaspoon rosemary or thyme

Instructions

1️⃣ Prep the Beef

  1. Remove beef from fridge ~30 minutes before cooking to reach room temperature.
  2. Rub with olive oil, garlic, salt, pepper, and herbs.

2️⃣ Sear the Meat

  1. Preheat a skillet or oven-safe pan over medium-high heat.
  2. Sear beef on all sides until browned (~2–3 minutes per side).

3️⃣ Roast in Oven

  1. Preheat oven to 180 °C (350 °F).
  2. Place beef on a roasting rack in a pan.
  3. Roast for:
    • Rare: 20 minutes per 500 g
    • Medium: 25 minutes per 500 g
    • Well done: 30 minutes per 500 g
  4. Use a meat thermometer:
    • Rare: 50–52 °C (122–125 °F)
    • Medium: 60–63 °C (140–145 °F)
    • Well done: 70 °C (160 °F)

4️⃣ Rest the Meat

  • Tent with foil and rest 10–15 minutes before slicing. This keeps juices inside.

Serving Suggestions

  • Serve with roasted vegetables, mashed potatoes, or in sandwiches.
  • Make a quick pan gravy using the drippings and a bit of flour or broth.

  • Low and slow roasting gives a more tender roast.
