Rich Banana Bread

Ah, rich banana bread—moist, flavorful, and full of banana goodness! Here’s a recipe that gives a tender, slightly sweet, and indulgent loaf:


Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp ground cinnamon (optional, for warmth)
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup brown sugar (light or dark)
  • 2 large eggs, room temperature
  • 3 ripe bananas, mashed (about 1 ½ cups)
  • 2 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt (for extra moisture)
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven:
    Preheat to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mix dry ingredients:
    In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Mix wet ingredients:
    In a large bowl, whisk melted butter and brown sugar. Add eggs, mashed bananas, vanilla, and sour cream, and mix until smooth.
  4. Combine:
    Gradually fold dry ingredients into wet ingredients just until combined. Don’t overmix. Fold in nuts or chocolate chips if using.
  5. Bake:
    Pour batter into prepared pan and smooth the top. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & serve:
    Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack. Slice and enjoy!

Tips for Extra Richness

  • Use very ripe bananas—they’re sweeter and more flavorful.
  • Adding sour cream or Greek yogurt keeps the bread super moist.
  • For a decadent twist, drizzle the top with melted chocolate or a brown sugar glaze after baking.
