Here’s a soft, fluffy, and easy Refrigerator Rolls recipe — perfect for make-ahead meals, dinner sides, or holiday dinners. These rise slowly in the fridge, so they’re convenient and extra tender.


🍞 Refrigerator Rolls

⭐ Ingredients (Makes ~12 rolls)

  • 1 cup warm milk (110°F / 43°C)
  • 2 ¼ tsp (1 packet) active dry yeast
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 1/4 cup unsalted butter, melted
  • 3 cups all-purpose flour (approx.; may need a little more)
  • 1 egg

Optional for brushing

  • 1–2 tbsp melted butter

1. Activate yeast

  1. Warm milk (110°F) in a small bowl.
  2. Stir in sugar and yeast.
  3. Let sit 5–10 minutes until foamy.

2. Make the dough

  1. In a large bowl, combine yeast mixture, melted butter, egg, and salt.
  2. Gradually mix in flour, 1 cup at a time, until a soft dough forms.
  3. Knead 5–7 minutes by hand or with a stand mixer until smooth and elastic.

3. Refrigerate for slow rise

  • Place dough in a lightly greased bowl.
  • Cover tightly with plastic wrap or a lid.
  • Refrigerate 8–24 hours.
  • The slow rise develops flavor and makes dough easier to handle.

4. Shape the rolls

  1. Remove dough from fridge and let sit 10–15 minutes to soften slightly.
  2. Divide into 12 equal pieces.
  3. Shape each into a ball and place on a greased baking pan (or in a 9×13 pan).
  4. Cover and let rise 30–45 minutes at room temperature until puffy.

5. Bake

  • Preheat oven to 375°F (190°C).
  • Optional: brush tops with melted butter.
  • Bake 15–20 minutes until golden brown.

6. Serve

  • Brush warm rolls with butter for extra softness.
  • Serve alongside soups, roasted meats, or as sliders.

⭐ Tips & Variations

  • Make-ahead freezer option: Freeze shaped rolls before second rise. Thaw overnight in the fridge and bake.
  • Whole wheat: Replace 1 cup flour with whole wheat flour.
  • Sweet rolls: Add 2 tbsp sugar to the dough and sprinkle cinnamon sugar on top before baking.
  • Garlic or herb: Mix minced garlic and herbs into melted butter and brush on top before baking.
