Raisin Cake Bars
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp cinnamon (optional but recommended)
- ¼ tsp salt
- ½ cup sugar (brown or white)
- ½ cup oil or melted butter
- 2 eggs
- 1 tsp vanilla
- ¾ cup raisins
- ¼ cup milk
Instructions
- Preheat oven to 170°C / 350°F. Line or grease an 8×8 inch pan.
- Soak raisins in warm water for 10 minutes, then drain (makes them plumper).
- Mix dry ingredients: flour, baking powder, cinnamon, and salt.
- Mix wet ingredients: sugar, oil/butter, eggs, vanilla, and milk.
- Combine wet and dry ingredients gently.
- Fold in raisins.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool, cut into bars, and serve.
