Pork loin and potatoes

Here’s a simple and delicious Pork Loin with Roasted Potatoes recipe that’s perfect for a comforting meal:


Ingredients (serves 4–6)

For the pork loin:

  • 2–3 lb (900 g–1.4 kg) boneless pork loin
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried rosemary (or 2 tsp fresh, chopped)
  • 1 tsp dried thyme (or 2 tsp fresh, chopped)
  • Optional: 1 tbsp Dijon mustard for extra flavor

For the potatoes:

  • 1.5 lb (700 g) baby potatoes or Yukon Gold, halved or quartered
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried rosemary or thyme

Instructions

  1. Preheat oven:
    • Preheat oven to 400°F (200°C).
  2. Prepare the pork loin:
    • In a small bowl, mix olive oil, garlic, salt, pepper, rosemary, thyme, and optional mustard.
    • Rub mixture evenly over the pork loin.
  3. Prepare the potatoes:
    • Toss potatoes with olive oil, salt, pepper, paprika, and herbs.
    • Spread them on a large baking sheet or roasting pan.
  4. Roast:
    • Place pork loin on the same pan (or in a separate roasting pan if needed).
    • Roast in the preheated oven for 25–30 minutes per pound of pork, or until internal temperature reaches 145°F (63°C).
    • Halfway through, stir potatoes to ensure even roasting.
  5. Rest and serve:
    • Remove pork from oven and let rest for 10 minutes before slicing.
    • Serve with roasted potatoes on the side. Optionally, drizzle pan juices over pork and potatoes.

This is a classic, easy-to-make meal with minimal cleanup.
