Here’s a comforting Pork Chop Casserole recipe—tender pork chops baked with a creamy sauce and a topping for a hearty meal:


Ingredients (Serves 4–6)

  • 4 boneless pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp dried thyme or Italian seasoning
  • 1 1/2 cups cooked rice (optional, for a “rice casserole” version)
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp melted butter (if using breadcrumbs)

Instructions

  1. Preheat oven:
    • Preheat to 350°F (175°C).
  2. Prepare pork chops:
    • Season pork chops with salt and pepper.
    • In a skillet, heat olive oil over medium-high heat.
    • Sear pork chops 2–3 minutes per side until lightly browned (they will finish cooking in the oven). Remove and set aside.
  3. Make the sauce:
    • In the same skillet, sauté onion and garlic until softened.
    • Stir in cream of mushroom soup, sour cream, milk, and thyme. Heat until smooth and combined.
  4. Assemble the casserole:
    • If using rice, spread cooked rice in the bottom of a greased 9×13-inch baking dish.
    • Place pork chops on top (or directly in the dish if not using rice).
    • Pour the creamy sauce over the pork chops.
    • Sprinkle shredded cheese over the top.
    • Optional: Mix breadcrumbs with melted butter and sprinkle on top for a crunchy topping.
  5. Bake:
    • Cover with foil and bake for 25–30 minutes.
    • Remove foil and bake an additional 10–15 minutes until cheese is bubbly and pork chops are fully cooked (internal temp ~145°F / 63°C).
  6. Serve:
    • Let rest 5 minutes before serving. Enjoy with vegetables or a simple salad.

  • You can swap cream of mushroom soup with cream of chicken or celery for different flavors.
  • Add vegetables like mushrooms, green beans, or bell peppers for a one-dish meal.
  • For extra flavor, season the sauce with a splash of Worcestershire sauce or Dijon mustard.
