Pistachio-Crusted Brie Bites
Ingredients:
-
1 small wheel of brie (about 8 oz)
-
1/2 cup pistachios, shelled and finely chopped
-
1 sheet phyllo dough (or puff pastry if you prefer a flakier bite)
-
2 tbsp unsalted butter, melted
-
1–2 tbsp honey (or fruit jam, such as apricot or fig)
-
1 tbsp fresh thyme leaves (optional, for garnish)
-
Pinch of sea salt (optional, for garnish)
Instructions:
-
Prepare the Brie:
-
Preheat your oven to 375°F (190°C).
-
Slice the brie into small cubes, about 1-inch in size. You can leave the rind on, as it softens and blends beautifully with the creamy inside when baked.
-
-
Prepare the Phyllo Dough:
-
If you’re using phyllo dough, place a sheet of phyllo on a clean surface and brush it lightly with melted butter. Then, layer another sheet of phyllo on top and brush that with more butter. Repeat this process until you’ve used 3-4 sheets (this gives you a nice, sturdy base for your bites).
-
If you’re using puff pastry, simply roll it out on a floured surface and cut it into squares large enough to wrap around the brie pieces.
-
-
Assemble the Brie Bites:
-
Cut the layered phyllo dough into 1–1.5-inch squares (or use a cookie cutter to make circles if you prefer a more uniform shape).
-
Place one piece of brie in the center of each phyllo square or puff pastry square.
-
Top each piece of brie with a small spoonful of chopped pistachios.
-
Gently fold the corners of the phyllo dough over the brie, pinching the edges to form little packets or bundles. If using puff pastry, fold the dough over the brie and pinch the edges to seal.
-
-
Bake the Brie Bites:
-
Place the assembled bites on a baking sheet lined with parchment paper.
-
Brush the tops with a little more melted butter to help them get golden and crispy.
-
Bake in the preheated oven for about 12-15 minutes, or until the phyllo or puff pastry is golden brown and crispy, and the brie is melting inside.
-
-
Finish and Serve:
-
Once out of the oven, drizzle the pistachio-crusted brie bites with a little honey or fruit jam (apricot or fig work wonderfully).
-
Garnish with a sprinkle of fresh thyme leaves for a burst of color and a fragrant finish.
-
Optionally, add a pinch of sea salt on top for contrast and extra flavor.
-
Pro Tips:
-
Customize the filling: Feel free to switch up the nuts! If you’re not a fan of pistachios, try walnuts, almonds, or even hazelnuts for a different flavor.
-
Make-ahead tip: You can assemble the brie bites a day ahead, refrigerate them, and then bake when you’re ready to serve.
-
Extra crispy: If you want extra crunch, you can sprinkle a bit of panko breadcrumbs over the pistachios before baking.
-
Garnishing: If you’re not into thyme, a few chopped chives or a drizzle of balsamic glaze would work perfectly to add more layers of flavor.
