Pineapple shrimp skewers

Here’s a bright, sweet, and savory Pineapple Shrimp Skewers recipe—perfect for grilling, pan-searing, or baking. Juicy shrimp + caramelized pineapple + a tangy marinade = amazing!


🍍 Pineapple Shrimp Skewers

Ingredients (makes 6–8 skewers)

For the Skewers

  • 1 lb large shrimp, peeled & deveined
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks (optional but recommended)
  • 1 small red onion, cut into chunks (optional)
  • Wooden or metal skewers

Marinade

  • ¼ cup soy sauce
  • 3 tbsp honey or brown sugar
  • 2 tbsp pineapple juice (or orange juice)
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp ginger (fresh grated or powdered)
  • ¼ tsp black pepper
  • Optional: ½ tsp red pepper flakes for sweet heat

Instructions

1. Prep the shrimp

  • Pat shrimp dry and place them in a bowl.

2. Make the marinade

Whisk together:

  • Soy sauce
  • Honey/brown sugar
  • Pineapple juice
  • Lime juice
  • Garlic
  • Ginger
  • Olive oil
  • Black pepper

Pour half over the shrimp and toss.
Reserve the remaining half for brushing while grilling.

Marinate 15–30 minutes (don’t go over 1 hour — shrimp marinates fast).


3. Build the skewers

Alternate:

Shrimp → Pineapple → Pepper → Onion, repeating until skewers are full.


4. Cook the skewers

Grill (Best Method)

  1. Preheat grill to medium-high.
  2. Grill skewers 2–3 minutes per side.
  3. Brush with reserved marinade as they cook.
  4. Remove once shrimp are pink, curled, and opaque.

Stovetop (Grill Pan or Skillet)

  • Cook skewers on medium-high heat 2–3 minutes per side.

Oven

  • Bake at 425°F (220°C) for 10–12 minutes.
  • Broil the last 1–2 minutes for char.

5. Serve

Great with:

🍚 Coconut rice
🥗 Mixed greens
🍍 Extra grilled pineapple
🌶 Sweet chili sauce
🍋 Lime wedges


⭐ Tips & Variations

Teriyaki Version

Use teriyaki sauce + garlic + ginger instead of soy/honey.

Spicy Caribbean Version

Add jerk seasoning + a splash of pineapple rum.

Hawaiian BBQ

Brush with BBQ sauce mixed 50/50 with pineapple juice.

Veggie Add-ins

Zucchini, mushrooms, or cherry tomatoes work great.
