Here’s a tropical and refreshing Pineapple Dessert that’s easy to make and perfect for summer or any time you’re craving something sweet and fruity! 🍍🍨

Pineapple Coconut Cream Dessert 🍍🥥

This dessert combines creamy coconut, tangy pineapple, and a hint of sweetness — it’s like a tropical paradise in a bowl!


🥘 Ingredients (Serves 6-8)

  • 1 can (20 oz) crushed pineapple (or fresh pineapple, finely chopped)
  • 1 cup coconut cream (or sweetened coconut milk)
  • 1 cup whipped cream (or 1 cup heavy cream whipped with 2 tablespoons powdered sugar)
  • 1 package (8 oz) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut (toasted, optional, for garnish)
  • ¼ cup chopped walnuts or macadamia nuts (optional)
  • 1/2 cup crushed graham crackers or Nilla wafers (optional, for crust or crunch)

🥄 Instructions

  1. Prepare the base:
    • In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  2. Add the coconut cream:
    • Stir in the coconut cream (or coconut milk).
    • Mix well until the mixture is smooth and thick.
  3. Add whipped cream:
    • In a separate bowl, whip the heavy cream until stiff peaks form (if you’re making your own whipped cream).
    • Gently fold the whipped cream into the cream cheese-coconut mixture. Set aside.
  4. Add the pineapple:
    • Drain the crushed pineapple (reserve some juice for a drink or smoothie if you like).
    • Stir the pineapple into the creamy mixture. The juice from the pineapple will help loosen the dessert a bit, but it shouldn’t be too runny.
  5. Layer and chill:
    • If you’re using crushed graham crackers or Nilla wafers, layer them at the bottom of serving glasses or a large trifle dish.
    • Spoon the creamy pineapple mixture over the crackers.
    • Smooth out the top and refrigerate for at least 2 hours or until well chilled.
  6. Garnish:
    • Before serving, sprinkle with toasted coconut, nuts, or extra crushed graham crackers for crunch. You can also add a cherry or pineapple slice on top for extra tropical flair.
  7. Serve and enjoy:
    • Scoop out into bowls or serve directly from the dish.

💡 Tips:

  • If you like a dairy-free version, substitute the cream cheese with a non-dairy cream cheese and use coconut whipped cream in place of the regular whipped cream.
  • For a lighter option, you can use Greek yogurt instead of cream cheese and whip it for a tangier flavor.
  • You can add some lime zest or juice for a citrusy twist to balance out the sweetness.
