Here’s a classic, easy-to-make version that tastes like it came straight from a bakery:


🍍 Pineapple Coconut Dream Cake

🧂 Ingredients

Cake

  • 1 box yellow cake mix (or white or pineapple flavor)

  • ½ cup vegetable oil

  • 4 large eggs

  • 1 (20 oz) can crushed pineapple in juice, undrained

  • 1 tsp vanilla extract

Filling

  • 1 cup sugar

  • 2 tbsp cornstarch

  • 1 (20 oz) can crushed pineapple in juice

  • 2 tbsp butter

Topping

  • 1 (8 oz) pkg cream cheese, softened

  • 1 (8 oz) tub whipped topping (Cool Whip), thawed

  • ½ cup powdered sugar

  • 1 cup sweetened shredded coconut, toasted or plain


🍰 Instructions

1. Make the Cake

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.

  2. In a large bowl, mix together the cake mix, oil, eggs, pineapple (with juice), and vanilla until combined.

  3. Pour into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  4. Let cool completely.

2. Make the Pineapple Filling

  1. In a saucepan, combine sugar and cornstarch.

  2. Stir in crushed pineapple (with juice).

  3. Cook over medium heat, stirring constantly, until mixture thickens and becomes glossy (about 5–7 minutes).

  4. Remove from heat and stir in butter. Cool completely.

3. Make the Frosting

  1. In a mixing bowl, beat cream cheese and powdered sugar until smooth.

  2. Fold in whipped topping until fluffy and combined.

4. Assemble

  1. Spread the cooled pineapple filling evenly over the cooled cake.

  2. Top with the cream cheese whipped frosting.

  3. Sprinkle with shredded coconut (toasted for extra flavor, if you like).

  4. Chill for at least 2 hours before serving for best texture and flavor.


🌴 Tips & Variations

  • Make it layered: Use two 8-inch round pans, split the cake, and layer filling and frosting.

  • Add nuts: Sprinkle chopped pecans or macadamia nuts on top.

  • Extra tropical: Add ½ tsp coconut extract to the frosting.
