Pineapple coconut dream cake

Here’s a decadent Pineapple Coconut Dream Cake recipe—moist, tropical, and creamy, perfect for a special occasion:


Ingredients

For the cake:

  • 2 ½ cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 cup crushed pineapple, drained

  • ½ cup coconut milk (or regular milk)

  • 1 cup shredded sweetened coconut

For the frosting:

  • 1 package (8 oz) cream cheese, softened

  • ½ cup unsalted butter, softened

  • 4 cups powdered sugar

  • 1 tsp vanilla extract

  • 2–3 tbsp milk (optional, for consistency)

For garnish:

  • ½ cup toasted shredded coconut

  • Pineapple slices or chunks (optional)


Instructions

  1. Preheat oven:

    • 350°F (175°C).

    • Grease and flour two 9-inch round cake pans.

  2. Prepare the cake batter:

    • In a medium bowl, whisk together flour, baking powder, and salt.

    • In a large bowl, beat butter and sugar until light and fluffy.

    • Add eggs one at a time, beating well after each addition.

    • Mix in vanilla extract and crushed pineapple.

    • Alternately add flour mixture and coconut milk, beginning and ending with flour.

    • Fold in shredded coconut.

  3. Bake:

    • Divide batter evenly between prepared pans.

    • Bake 25–30 minutes or until a toothpick inserted in the center comes out clean.

    • Cool 10 minutes in pans, then transfer to a wire rack to cool completely.

  4. Prepare frosting:

    • Beat cream cheese and butter until smooth.

    • Gradually add powdered sugar, beating until creamy.

    • Mix in vanilla extract and milk if needed for spreading consistency.

  5. Assemble cake:

    • Place one cake layer on a serving plate.

    • Spread a layer of frosting on top.

    • Place second cake layer on top and frost the top and sides of the cake.

    • Sprinkle toasted coconut over the top and garnish with pineapple slices or chunks if desired.

  6. Serve:

    • Chill for 30 minutes to set frosting slightly.

    • Slice and enjoy!


💡 Tips:

  • For extra moisture, brush cake layers with a little pineapple juice before frosting.

  • Use sweetened coconut for a richer, sweeter flavor.

  • Cake can be stored in the refrigerator for up to 4–5 days.
