Pineapple Bread

Sweet, moist, and a little tropical 🌴🍍 Here’s a Pineapple Bread recipe that’s easy and always a hit.


Pineapple Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple with juice
  • ½ cup chopped nuts (walnuts or pecans – optional)

Instructions

  1. Preheat oven
    • 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix dry ingredients
    • In a bowl, whisk flour, baking soda, salt, and sugars.
  3. Mix wet ingredients
    • In another bowl, beat eggs, oil (or butter), vanilla, and crushed pineapple with juice.
  4. Combine
    • Stir wet ingredients into dry ingredients just until mixed.
    • Fold in nuts if using.
  5. Bake
    • Pour batter into loaf pan.
    • Bake 55–65 minutes, until a toothpick inserted in the center comes out clean.
  6. Cool
    • Let cool in pan 10 minutes, then transfer to a wire rack.

💡 Tips & Variations

  • For extra moisture, add ¼ cup sour cream or Greek yogurt.
  • Sprinkle brown sugar on top before baking for a caramelized crust.
  • Add shredded coconut for a tropical twist.
  • Drizzle with a simple glaze (powdered sugar + pineapple juice) for dessert-style bread.
