Ah, Peanut Butter Butterscotch Bars—rich, chewy, nutty, and loaded with sweet butterscotch flavor. They’re perfect for dessert or a snack, and you don’t even need a mixer! Here’s a solid recipe:


Ingredients

  • 1 cup (230 g) unsalted butter, melted
  • 1 cup (200 g) brown sugar, packed
  • ½ cup (100 g) granulated sugar
  • 1 cup (250 g) creamy peanut butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup butterscotch chips

Instructions

1. Preheat and Prep Pan

  • Preheat oven to 350°F (175°C).
  • Line a 9×13-inch baking pan with parchment paper or lightly grease it.

2. Make the Batter

  1. In a large bowl, whisk together melted butter, brown sugar, granulated sugar, and peanut butter until smooth.
  2. Add eggs and vanilla extract; mix until fully combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.

3. Fold in Butterscotch Chips

  • Gently fold in the butterscotch chips, saving a few to sprinkle on top if you like.

4. Bake

  • Spread batter evenly in the prepared pan.
  • Bake for 25–30 minutes, or until lightly golden and a toothpick in the center comes out mostly clean (slightly fudgy is fine).

5. Cool and Slice

  • Let cool completely in the pan before cutting into bars.

Tips

  • Chewier bars: Slightly underbake (take out when just set in the center).
  • Extra chocolate twist: Add ½ cup chocolate chips along with the butterscotch chips.
  • Storage: Keep in an airtight container at room temperature for up to 5 days or freeze for longer storage.
