Ingredients

For the filling:

  • 2 cans (15 oz each) sliced peaches, drained (reserve ¼ cup syrup from the cans)
  • ½ cup sugar (adjust depending on sweetness of peaches)
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, brightens flavor)

For the topping (batter style):

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the filling: In a medium bowl, mix peaches, sugar, cinnamon, nutmeg, vanilla, and lemon juice. Pour into a greased 8×8-inch or similar baking dish. Drizzle reserved syrup over the peaches.
  3. Make the topping: In another bowl, combine flour, sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until smooth.
  4. Assemble: Pour the batter over the peaches. Don’t worry if the peaches peek through—the batter spreads as it bakes.
  5. Bake for 40–45 minutes until the top is golden and a toothpick inserted in the topping comes out clean.
  6. Cool slightly before serving. Optional: serve warm with ice cream or whipped cream.

This method gives a soft, cakey topping with juicy peaches underneath, very comforting and quick since canned peaches are already soft and sweet.
