Instructions
- Prepare the pan:
Line an 8-inch square pan with foil or parchment paper. Butter lightly or spray with nonstick spray. - Cook the base:
In a heavy saucepan, combine sugar, evaporated milk, butter, and salt. Bring to a full rolling boil over medium heat, stirring constantly. - Boil for 5 minutes:
Continue stirring and boiling for exactly 5 minutes. (Set a timer—this step gives the fudge its perfect texture.) - Add the chocolate and marshmallows:
