Here’s a comforting and simple Pastina Soup — tiny pasta in a flavorful broth, perfect for cozy meals or for kids. 🍲✨


🍲 Pastina Soup

Serves: 4

Cook Time: 15 min


Ingredients

  • 4 cups (960 ml) chicken or vegetable broth
  • ½ cup pastina (tiny star-shaped pasta)
  • 1 small carrot, finely diced (optional)
  • 1 small celery stalk, finely diced (optional)
  • 1 small onion, finely diced (optional)
  • 1 tsp olive oil or butter
  • Salt & pepper, to taste
  • 1–2 tbsp grated Parmesan cheese
  • Optional: fresh parsley or basil for garnish

Instructions

1. Sauté Vegetables (Optional)

  1. In a medium pot, heat olive oil or butter over medium heat.
  2. Add diced onion, carrot, and celery. Sauté 3–4 minutes until softened.

2. Add Broth

  • Pour in the chicken or vegetable broth.
  • Bring to a gentle boil.

3. Cook Pastina

  1. Add pastina to the boiling broth.
  2. Cook 4–6 minutes, stirring occasionally, until tender.

4. Season & Serve

  • Season with salt and pepper to taste.
  • Stir in Parmesan cheese for extra flavor.
  • Optional: garnish with chopped parsley or basil.
  • Serve warm.

Tips & Variations

  • Creamy Version: Stir in ¼ cup heavy cream at the end for a richer soup.
  • Protein Boost: Add shredded chicken, small meatballs, or cooked beans.
  • Vegetable Boost: Add peas, spinach, or zucchini for extra nutrition.
  • Kid-Friendly: Keep it simple with just broth, pastina, and Parmesan.
