Here’s a simple and delicious Parmesan Zucchini recipe—crispy on the outside, tender on the inside, and packed with cheesy flavor.


🥒 Parmesan Zucchini

Serves 4


Ingredients

  • 2 medium zucchinis
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko for extra crunch)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1–2 tbsp olive oil (or melted butter)
  • Optional: chopped fresh parsley for garnish

Instructions

1. Preheat oven

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2. Prepare zucchini

  1. Wash and slice zucchini into ½-inch thick rounds or sticks.
  2. In a small bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.

3. Coat zucchini

  • Brush zucchini slices lightly with olive oil, then press both sides into the Parmesan mixture.

4. Bake

  • Arrange zucchini on the baking sheet in a single layer.
  • Bake 15–20 minutes, flipping halfway through, until golden brown and crispy.

5. Serve

  • Garnish with fresh parsley and an extra sprinkle of Parmesan if desired.
  • Serve warm as a side dish, appetizer, or snack.

Tips

  • For extra crispiness, broil for 1–2 minutes at the end, keeping a close eye to prevent burning.
  • Can also be made air fryer style at 400°F for 10–12 minutes.
  • Add Italian seasoning or paprika to the breadcrumb mix for more flavor.
