Classic, fluffy, no-box-needed pancakes coming right up 🥞😌
This is a from-scratch, foolproof recipe you can memorize and make anytime.


🥞 Pancakes From Scratch

Ingredients (makes ~8–10 pancakes)

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • 1¼ cups milk
  • 1 egg
  • 3 tbsp melted butter (or oil)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix dry ingredients
    In a bowl, whisk flour, baking powder, sugar, and salt.
  2. Mix wet ingredients
    In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine
    Pour wet into dry. Stir gently until just combined.
    👉 A few lumps = fluffy pancakes. Overmixing = flat sadness.
  4. Rest batter
    Let sit 5–10 minutes for extra fluff.
  5. Cook
    Heat a lightly greased skillet or griddle over medium heat.
    Pour ¼ cup batter per pancake.
  6. Flip
    When bubbles form and edges look set (about 2 minutes), flip.
    Cook another 1–2 minutes until golden.
  7. Serve hot
    Butter, syrup, repeat.

  • For extra fluffy pancakes: replace ¼ cup milk with buttermilk.
  • For crispy edges: cook in butter, not oil.
  • Keep warm in oven at 200°F (95°C) while cooking batches.
