Ingredients

Serves 6–8

For the pancake layer:

  • 2 cups all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • ½ tsp salt

  • 2 cups milk

  • 2 large eggs

  • ¼ cup melted butter or vegetable oil

  • 1 tsp vanilla extract (optional)

For the sausage & egg layer:

  • 1 lb breakfast sausage (links or bulk), cooked and crumbled

  • 6 large eggs

  • 1 cup milk

  • ½ tsp black pepper

Instructions

1. Prepare the pancake batter

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  2. In another bowl, whisk together milk, eggs, melted butter, and vanilla.

  3. Pour wet ingredients into dry ingredients and stir until just combined (batter will be slightly lumpy).

2. Cook the sausage

  • In a skillet, cook sausage over medium heat until browned and cooked through. Drain excess fat.

  • If using vegetables, sauté them in the skillet with the sausage until tender.

3. Assemble the casserole

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Spread half the pancake batter in the bottom of the dish.

  3. Layer cooked sausage (and vegetables, if using) over the batter.

  4. Sprinkle half of the cheese over the sausage.

  5. Pour the remaining pancake batter over the sausage layer. It will partially cover the filling — that’s okay.

  6. Beat eggs with 1 cup milk, salt, and pepper; pour evenly over the casserole.

  7. Sprinkle remaining cheese on top.

4. Bake

  • Bake for 35–45 minutes, until eggs are set and the top is golden.

  • Let cool 5–10 minutes before slicing.
