🥞 Pancake Sausage Casserole
Ingredients
Serves 6–8
For the pancake layer:
-
2 cups all-purpose flour
-
2 tbsp sugar
-
1 tbsp baking powder
-
½ tsp salt
-
2 cups milk
-
2 large eggs
-
¼ cup melted butter or vegetable oil
-
1 tsp vanilla extract (optional)
For the sausage & egg layer:
-
1 lb breakfast sausage (links or bulk), cooked and crumbled
-
6 large eggs
-
1 cup milk
-
1 tsp salt
-
½ tsp black pepper
-
1 cup shredded cheddar cheese (or cheese of choice)
-
Optional: diced bell peppers, onions, or mushrooms
Instructions
1. Prepare the pancake batter
-
In a large bowl, whisk together flour, sugar, baking powder, and salt.
-
In another bowl, whisk together milk, eggs, melted butter, and vanilla.
-
Pour wet ingredients into dry ingredients and stir until just combined (batter will be slightly lumpy).
2. Cook the sausage
-
In a skillet, cook sausage over medium heat until browned and cooked through. Drain excess fat.
-
If using vegetables, sauté them in the skillet with the sausage until tender.
3. Assemble the casserole
-
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
-
Spread half the pancake batter in the bottom of the dish.
-
Layer cooked sausage (and vegetables, if using) over the batter.
-
Sprinkle half of the cheese over the sausage.
-
Pour the remaining pancake batter over the sausage layer. It will partially cover the filling — that’s okay.
-
Beat eggs with 1 cup milk, salt, and pepper; pour evenly over the casserole.
-
Sprinkle remaining cheese on top.
4. Bake
-
Bake for 35–45 minutes, until eggs are set and the top is golden.
-
Let cool 5–10 minutes before slicing.
🌟 Tips
-
Make-ahead: Assemble the casserole the night before and refrigerate; bake in the morning for easy brunch prep.
-
Add flavor: Mix in a pinch of smoked paprika, garlic powder, or herbs to the egg mixture.
-
Cheese variations: Swiss, pepper jack, or mozzarella all work well.
-
Serving idea: Serve with maple syrup for a sweet-savory twist.
If you want, I can also give a mini muffin version of this casserole — pancake, sausage, and cheese baked in bite-sized portions for quick breakfasts or brunch parties.
Do you want me to provide that version?
