Ingredients (serves 10–12)

Crust

  • 2 cups crushed vanilla wafers, graham crackers, or golden Oreos
  • Β½ cup (115 g) butter, melted

Cream Cheese Layer

  • 8 oz (225 g) cream cheese, softened
  • Β½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (whipped to stiff peaks)

Berry Cheesecake Layer

  • 3 oz (85 g) strawberry or raspberry gelatin powder (dry)
  • 1 cup boiling water
  • 8 oz (225 g) cream cheese, softened
  • 1 cup cold milk
  • 1 cup whipped topping or fresh whipped cream

Berry Layer

  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • Slice strawberries; keep others whole.

Whipped Topping Layer

  • 2 cups whipped cream or Cool Whip
  • Extra berries for garnish

1. Make the crust

  1. Mix crushed cookies with melted butter.
  2. Press firmly into the bottom of a 9Γ—13-inch baking dish.
  3. Refrigerate for 15–20 minutes.

2. Make the cream cheese layer

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in the whipped cream.
  3. Spread evenly over the chilled crust.
  4. Refrigerate while preparing the next layer.

3. Make the berry cheesecake layer

  1. Dissolve gelatin in boiling water. Let cool until just warm (not hot).
  2. In a bowl, beat cream cheese until smooth.
  3. Slowly add the gelatin mixture, cold milk, and whipped topping.
  4. Mix until creamy.
  5. Gently fold in 1 cup berries.
  6. Pour over the cream cheese layer and smooth out.
  7. Refrigerate for 2–3 hours, or until fully set.

4. Add the berry layer

  • Spread remaining berries evenly on top of the set cheesecake layer.

5. Top with whipped cream

  • Spread whipped topping or whipped cream over the berries.
  • Add extra berries for decoration.

6. Chill

  • Refrigerate for at least 4 hours, or overnight for best texture.
