Ingredients:
Crust
- 2 cups graham cracker crumbs
- ½ cup melted butter
Filling
- 1 (8 oz / 225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 (20 oz / ~565 g) can crushed pineapple, well drained
- 1 tub whipped topping (or 1½ cups homemade whipped cream)
Topping (optional but lovely)
- Extra whipped topping
- Toasted coconut or cherries
Instructions:
- Make crust: Mix graham crumbs and butter. Press firmly into a dish or springform pan. Chill 10 minutes.
- Mix filling: Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in drained pineapple, then gently fold in whipped topping.
- Spread filling evenly over crust.
