🥜 No-Bake Peanut Butter Balls

Ingredients (makes ~20 balls)

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 1/2 cups graham cracker crumbs (or crushed digestive biscuits)
  • 2 cups semi-sweet chocolate chips (for coating)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix the base: In a large bowl, combine peanut butter, softened butter, and vanilla until smooth.
  2. Add dry ingredients: Stir in powdered sugar and graham cracker crumbs until fully combined. The mixture should be firm enough to roll into balls.
  3. Shape balls: Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Chill: Refrigerate the balls for 30–60 minutes to firm up.
  5. Melt chocolate: In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring in between, until smooth.
  6. Coat balls: Dip each peanut butter ball into the melted chocolate, using a fork to lift and shake off excess. Return to the parchment-lined tray.
  7. Set: Refrigerate again until the chocolate is firm (~30 minutes).

  • Add a pinch of salt to the peanut butter mixture for a sweet-salty flavor.
  • Sprinkle crushed nuts, coconut, or sprinkles over the chocolate before it sets.
  • For a lighter version, use dark chocolate or semi-sweet chocolate and reduce sugar slightly.
