Ingredients (8 servings)

For the crust

  • 1 ½ cups graham cracker crumbs (about 10–12 crackers)
  • ¼ cup sugar
  • 6 tbsp unsalted butter, melted

For the filling

  • 16 oz (450g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the topping

  • 1 can (21 oz) cherry pie filling
  • Fresh cherries or mint for garnish (optional)

Instructions

1. Make the crust

  1. In a bowl, combine graham cracker crumbs, sugar, and melted butter.
  2. Press firmly into the bottom of a 9-inch springform pan or pie dish.
  3. Chill in the fridge while making the filling.

2. Make the filling

  1. In a large bowl, beat softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, beating until creamy.
  3. In a separate bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture until smooth and light.

3. Assemble the cheesecake

  1. Spoon the filling over the chilled crust and smooth the top.
  2. Chill in the fridge for 4 hours or overnight to set.

4. Add the topping

  • Spoon cherry pie filling evenly over the cheesecake.
  • Garnish with fresh cherries or mint if desired.

5. Serve

  • Carefully remove from springform pan if using.
  • Slice with a sharp knife, wiping it clean between cuts.
