Here’s a classic Mexican Tortilla Casserole recipe — hearty, cheesy, and full of flavor! 🌮


🌶️ Mexican Tortilla Casserole

Serves: 6–8
Prep time: 20 minutes
Cook time: 35 minutes


🧂 Ingredients

  • 1 lb (450 g) ground beef (or turkey, or black beans for vegetarian)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz / 425 g) can black beans, drained and rinsed
  • 1 (15 oz / 425 g) can corn, drained
  • 1 (10 oz / 280 g) can diced tomatoes with green chiles (e.g., Rotel)
  • 1 (10 oz / 280 g) can red enchilada sauce
  • 1 tbsp taco seasoning (or homemade blend)
  • 6 small flour or corn tortillas (cut in halves or quarters)
  • 2 cups (200 g) shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • Salt and pepper, to taste
  • Optional toppings: sour cream, diced avocado, chopped cilantro, jalapeños, green onions

🍳 Instructions

  1. Preheat oven: to 375°F (190°C). Grease a 9×13-inch (23×33 cm) baking dish.
  2. Cook the filling:
    • In a large skillet over medium heat, brown the ground beef and onion until cooked through (about 6–8 minutes).
    • Add garlic, taco seasoning, beans, corn, tomatoes with chiles, and enchilada sauce. Stir and let simmer for 5 minutes.
  3. Assemble the casserole:
    • Spread a thin layer of the meat mixture on the bottom of the baking dish.
    • Add a layer of tortillas to cover the bottom.
    • Add another layer of the meat mixture, then sprinkle with cheese.
    • Repeat layers until all ingredients are used, finishing with cheese on top.
  4. Bake:
    • Cover with foil and bake for 20 minutes.
    • Remove foil and bake another 10–15 minutes, until the cheese is melted and bubbly.
  5. Serve:
    • Let cool for 5 minutes before slicing.
    • Top with sour cream, avocado, cilantro, or your favorite toppings.

🧀 Tips & Variations

  • Use tortilla chips instead of tortillas for a crunchier texture.
  • Add bell peppers or jalapeños to the meat mixture for extra flavor.
  • Swap enchilada sauce for salsa verde for a tangy twist.
  • Make it vegetarian by skipping the meat and doubling the beans and corn.
