Here’s a tasty and easy recipe for Mediterranean Spinach and Feta Crisps—flaky, cheesy, and perfect for snacks or appetizers.


🌿 Mediterranean Spinach and Feta Crisps

Makes 12–16 crisps


Ingredients

  • 1 sheet puff pastry (thawed if frozen)
  • 1 cup fresh spinach (or ½ cup cooked and drained)
  • ½ cup feta cheese, crumbled
  • 1 small onion, finely chopped (optional)
  • 1 garlic clove, minced (optional)
  • 1 tsp dried oregano or Italian seasoning
  • 1 egg (for egg wash)
  • Salt & pepper, to taste
  • Optional: sesame seeds for topping

Instructions

1. Preheat oven

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

2. Prepare the filling

  1. In a skillet, sauté onion and garlic until soft (if using).
  2. Add spinach and cook until wilted, or use cooked and drained spinach.
  3. Remove from heat, let cool slightly, then mix in feta, oregano, salt, and pepper.

3. Assemble the crisps

  1. Roll out puff pastry on a lightly floured surface.
  2. Cut into 3×3 inch squares (or circles).
  3. Place 1–2 tsp of spinach-feta mixture in the center of each square.
  4. Fold into triangles or rectangles and press edges with a fork to seal.

4. Egg wash

  • Beat the egg and brush over each crisp for a golden finish.
  • Sprinkle sesame seeds on top if desired.

5. Bake

  • Bake 15–20 minutes, until puffed and golden brown.

Tips

  • Serve warm or at room temperature with a dipping sauce like tzatziki.
  • For extra flavor, add sun-dried tomatoes or olives to the filling.
  • Can also be made in mini size for party appetizers.
