  • 1 cup shredded cheddar or Monterey Jack

For the filling:

  • 2 cloves garlic, minced

  • 1 small red onion, diced

  • 1 bell pepper, diced

  • Salt & pepper to taste

For the toppings:

  • Chopped cucumber

  • Diced tomato

  • Kalamata olives, sliced

  • Crumbled feta cheese

  • Shredded lettuce or arugula

  • Fresh herbs (mint, parsley, dill)

For the sauce:

  • 1 cup Greek yogurt

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 clove garlic, grated

  • Salt & pepper

  • Optional: 1 tbsp tahini for a richer flavor


🔥 Directions:

  1. Prepare the filling:

    • In a skillet over medium heat, cook the ground meat (or chickpeas) until browned.

    • Add garlic, onion, and bell pepper. Sauté until softened.

    • Season with paprika, cumin, oregano, salt, and pepper. Set aside.

  2. Make the cheesy pockets:

    • Heat a skillet or griddle over medium heat.

    • Place one pita/flatbread on the surface, sprinkle a layer of mozzarella + cheddar, add a few spoonfuls of the filling, then another sprinkle of cheese.

    • Fold in half (like a taco) and cook on both sides until golden and melty inside.

    • Repeat for all.

  3. Assemble the tacos:

    • Open the cheesy pockets slightly and stuff them with cucumber, tomato, olives, lettuce, and feta.
