Mediterranean Baked Salmon with Feta & Sun-Dried Tomatoes

Servings: 4

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed or rehydrated if dry)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, sliced (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven:
    • 400°F (200°C). Line a baking dish with parchment paper or lightly grease.
  2. Prepare salmon:
    • Pat salmon fillets dry and place in the baking dish.
    • Drizzle with olive oil, season with salt, pepper, and oregano.
    • Rub minced garlic evenly over the fillets.
  3. Add toppings:
    • Sprinkle chopped sun-dried tomatoes and feta cheese over each fillet.
    • Add olives and parsley if using.
    • Place lemon slices on top of or around the salmon.
  4. Bake:
    • Bake for 12–15 minutes, depending on thickness, until salmon is cooked through and flakes easily with a fork.
  5. Serve:
    • Serve immediately with your choice of side: roasted vegetables, rice, or a fresh salad.

✅ Tips:

  • For extra flavor, drizzle a little balsamic reduction over the salmon before serving.
  • You can broil for 1–2 minutes at the end to get a slightly golden top.
  • Substitute goat cheese for feta for a creamier texture.
