Meatloaf and mashed potatoes

Posted on November 11, 2025 by Admin

Ah, meatloaf and mashed potatoes—the ultimate comfort food duo! Classic, hearty, and perfect for a cozy dinner. Here’s a solid recipe for both:

Classic Meatloaf

Ingredients (serves 4–6):

  • 1 1/2 lbs (680 g) ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1/4 cup ketchup (plus extra for topping)

Instructions:

  1. Preheat oven: 350°F (175°C).
  2. Mix ingredients: In a large bowl, combine ground meat, breadcrumbs, milk, onion, garlic, egg, salt, pepper, Worcestershire sauce, and 1/4 cup ketchup. Mix until just combined.
  3. Shape: Form mixture into a loaf and place in a greased 9×5-inch loaf pan (or on a baking sheet).
  4. Top with ketchup: Spread extra ketchup on top for a nice glaze.
  5. Bake: 55–65 minutes, until internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.

Creamy Mashed Potatoes

Ingredients (serves 4–6):

  • 2 lbs (900 g) potatoes (Yukon Gold or Russet)
  • 4 tbsp butter
  • 1/2 cup milk (or cream for richer flavor)
  • Salt and pepper, to taste
  • Optional: garlic, sour cream, or chives

Instructions:

  1. Boil potatoes: Peel and cut potatoes into chunks. Boil in salted water until tender, about 15–20 minutes.
  2. Mash: Drain potatoes and return to pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
  3. Optional add-ins: Stir in roasted garlic, sour cream, or chopped chives for extra flavor.

✅ Serving tip:

  • Slice the meatloaf and serve it with a generous scoop of mashed potatoes. Pour some pan juices or extra ketchup over both for maximum comfort-food effect.

If you want, I can also give a “next-level” version with a brown gravy for the meatloaf and garlic-parmesan mashed potatoes—it’s like comfort food on steroids.

Do you want me to give that version?
