Ingredients

  • 1–2 lbs Ground beef, pork, or a mix (for meatballs)
  • 1–2 cups Potatoes, diced or small baby potatoes
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 1 cup Beef broth or chicken broth
  • 1/2 cup Tomato sauce or crushed tomatoes
  • Salt and Black pepper to taste
  • Optional: fresh herbs (thyme, rosemary, parsley)

Instructions

1. Prepare the meatballs

  • Mix ground meat with salt, pepper, and optional seasonings.
  • Shape into small meatballs, about 1–1.5 inches.

2. Layer in the slow cooker

  • Place potatoes and onions at the bottom.
  • Add meatballs on top.
  • Pour broth and tomato sauce over everything.
  • Sprinkle herbs if using.

3. Cook

  • Cover and cook on low for 6–8 hours or high for 3–4 hours until potatoes are tender and meatballs are cooked through.

4. Serve

  • Spoon meatballs and potatoes onto plates, and drizzle with cooking juices.

Tips

  • Brown meatballs first in a skillet for extra flavor and texture.
  • Use baby potatoes to save prep time, or dice larger potatoes for faster cooking.
  • Add carrots, peas, or bell peppers to make it a complete one-pot meal.

  • Garnish with fresh parsley or grated cheese
