🍅 Magic Tomato Salad

Ingredients

  • 4–5 ripe tomatoes (heirloom or vine-ripened are best), sliced or chopped

  • 1 small shallot (or ¼ red onion), thinly sliced

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon red wine vinegar (or balsamic for a deeper flavor)

  • 1 teaspoon honey (balances acidity — the secret “magic” touch)

  • 1 garlic clove, grated or finely minced

  • Salt and freshly ground black pepper, to taste

  • Fresh basil leaves (a handful, torn)

  • Optional: a pinch of chili flakes or flaky sea salt


Instructions

  1. Prep the dressing:
    In a small bowl, whisk together olive oil, vinegar, honey, garlic, salt, and pepper until smooth and emulsified.

  2. Assemble the salad:
    Place sliced tomatoes and shallots in a bowl or platter. Pour the dressing over them.

  3. Toss gently:
    Mix just enough to coat everything — you want the tomatoes glossy but not mushy.

  4. Let it sit (the “magic” part):
    Let the salad rest for 10–15 minutes at room temperature. The tomatoes will release their juices and mingle with the dressing to create an incredible natural sauce.

  5. Finish & serve:
