🍗 Low-Carb Creamy Garlic Chicken

Ingredients (serves 3–4)

  • 4 boneless, skinless chicken breasts or thighs
  • Salt & black pepper, to taste
  • 1 tsp paprika (optional)
  • 2 tbsp olive oil or butter
  • 5–6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning or dried thyme
  • Optional: fresh parsley or spinach

Instructions

  1. Season & sear chicken
    • Season chicken with salt, pepper, and paprika.
    • Heat oil or butter in a skillet over medium heat.
    • Sear chicken 4–5 minutes per side until golden and cooked through.
    • Remove chicken and set aside.
  2. Make garlic sauce
    • In the same pan, add garlic and cook 30 seconds (don’t brown).
    • Pour in chicken broth and scrape up any browned bits.
    • Add cream, Parmesan, and Italian seasoning.
    • Simmer 3–5 minutes until sauce thickens.
  3. Combine
    • Return chicken to the pan.
    • Spoon sauce over chicken and simmer 5 minutes.
  4. Finish & serve
    • Taste and adjust seasoning.
    • Garnish with parsley or stir in spinach until wilted.

  • Steamed broccoli or green beans
  • Simple side salad

Tips

  • Chicken thighs stay extra juicy if you prefer them.
  • Add mushrooms for more flavor without adding carbs.
